Production Process

The manufacturing process of vegetable pickles involves four main steps: preparation, brining, fermentation and packaging. In the preparation step, fresh vegetables are washed, peeled, trimmed and cut into desired shapes and sizes. In the brining step, the vegetables are soaked in a salt solution to draw out moisture and inhibit the growth of harmful bacteria. In the fermentation step, the vegetables are transferred to airtight containers and left at room temperature for several days or weeks, allowing lactic acid bacteria to produce acid and flavor compounds. In the packaging step, the fermented vegetables are drained, rinsed and packed into jars or cans with vinegar, spices and other ingredients.

Selection and preparation

The vegetables are sorted by size, shape and quality, and washed thoroughly to remove dirt and insects. They are then cut into desired pieces or left whole, depending on the type of pickle.

Step: 2
Brining

The vegetables are soaked in a salt solution (brine) for a certain period of time, which helps to preserve them and enhance their flavor. The brine may also contain spices, herbs, vinegar or sugar for added taste.



Step: 3
Packing and pasteurization

The vegetables are drained from the brine and packed into glass jars or plastic containers, leaving some headspace for expansion. The jars or containers are then sealed and heated to a high temperature (pasteurization) to kill any harmful bacteria and extend the shelf life of the pickles.

Step: 4
Cooling and storage

The jars or containers are cooled rapidly and stored in a cool and dark place until they are ready to be consumed or distributed. The pickles may undergo further fermentation during storage, which improves their texture and flavor.
